From Their Hands to Our Table: Why We Chose Lindley Mills Unbleached Bread Flour

At Occasions By M, I believe a great dining experience begins long before the first plate reaches the table. It begins with the ingredients we choose, the people who produce them, and the relationships we build along the way. If you've experienced one of our private dinners, you know that breaking bread is an important part of our hospitality. It's an opportunity to gather, connect, and begin an evening together. As we continue developing our artisan bread collection and bakery preorder program, we're also becoming more intentional about where our ingredients come from. That's why I'm excited to share that we're now sourcing Lindley Mills Unbleached Bread Flour from Graham, North Carolina.

A North Carolina Milling Legacy

Lindley Mills carries a longstanding North Carolina milling tradition. That history matters to me. As a chef, I understand that what happens before an ingredient reaches my kitchen is just as important as what I do with it afterward. Milling is a craft. Baking is a craft. And hospitality brings those crafts together.

Why Our Flour Matters

We're now sourcing our unbleached bread flour from Lindley Mills in Graham, North Carolina. As we continue refining our signature dinner rolls, artisan boule table bread, brioche loaves, and other baked goods, choosing the right flour is an important part of our process. Bread flour provides the protein needed to develop gluten structure, helping us achieve the texture, strength, and consistency we're looking for in our breads. Protein content, hydration, fermentation, gluten development, and baking technique all contribute to the finished product. Our goal is to continue refining our breads with ingredients selected for quality and consistency.

Supporting the People Behind Our Food

North Carolina has an incredible agricultural community. From farmers growing greens to millers producing flour, there are people working every day to make good food possible. As a small hospitality business, I want Occasions By M to be intentional about supporting that community. When we purchase ingredients from North Carolina producers, we're doing more than filling our pantry. We're building relationships and helping keep the stories of local craftsmanship alive.
